- 2 (3 ounce) packages ramen noodles, discard seasoning packets
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon packed brown sugar
- 1 teaspoon sesame oil
- 1/2 teaspoon cornstarch
- 2 tablespoons vegetable oil
- 12 ounces beef sirloin, thinly sliced
- 2 cups broccoli florets
- 2 cloves garlic, minced
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1/4 cup water
- 2 scallions, sliced (for garnish)
- Toasted sesame seeds (for garnish)
Instructions
- Cook the ramen noodles: Bring a pot of water to a boil and cook the ramen noodles for about 2–3 minutes until just tender. Drain and set aside. They’ll finish cooking in the sauce later.
- Make the sauce: In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, brown sugar, sesame oil, and cornstarch. This blend creates a glossy, savory-sweet sauce that clings to every noodle strand and broccoli floret.
- Sear the beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced beef in a single layer and sear for 1–2 minutes per side, just until browned. Don’t overcrowd the pan—work in batches if needed. Remove the beef and set aside.
- Stir fry the broccoli: Add the remaining tablespoon of oil to the same pan. Toss in the broccoli florets and cook for 2–3 minutes until bright green and slightly tender. Add the garlic and red pepper flakes, cooking for another 30 seconds until fragrant.
- Combine everything: Return the cooked beef to the skillet, along with the drained ramen noodles and the prepared sauce. Pour in about 1/4 cup of water to loosen the sauce and help it coat everything evenly. Toss well and stir-fry for another 2 minutes until everything is hot and the sauce is glossy.
- Garnish and serve: Top with sliced scallions and toasted sesame seeds. Serve hot and enjoy the savory, slurp-worthy flavors.
