A delicious and easy blueberry croissant bake that’s perfect for breakfast or brunch!
Ingredients

- 6 large croissants (preferably day-old)
- 1 cup fresh or frozen blueberries
- 8 oz cream cheese, softened
- 1 cup milk
- 1/2 cup heavy cream
- 4 large eggs
- 1/2 cup granulated sugar
- 2 tsp vanilla extract
- Powdered sugar for dusting (optional)
Instructions
- Preheat oven to 350°F and grease a 9×13-inch baking dish.
- Tear croissants into large chunks and layer half into the prepared dish.
- In a bowl, beat the softened cream cheese, 1/4 cup sugar, and 1 tsp vanilla until smooth.
- Drop spoonfuls of the cream cheese mixture over the croissants and sprinkle with half the blueberries.
- Add the remaining croissant pieces and blueberries on top.
- In another bowl, whisk together eggs, milk, heavy cream, remaining sugar, and vanilla extract.
- Pour the custard evenly over the croissant layers.
- Let sit for 20–30 minutes (or refrigerate overnight for deeper soak).
- Bake uncovered for 35–45 minutes until golden and center is set.
- Cool slightly, dust with powdered sugar, and serve warm.
