Description

A delicious and easy blueberry croissant bake that’s perfect for breakfast or brunch!


Ingredients

Scale
  • 6 large croissants (preferably day-old)
  • 1 cup fresh or frozen blueberries
  • 8 oz cream cheese, softened
  • 1 cup milk
  • 1/2 cup heavy cream
  • 4 large eggs
  • 1/2 cup granulated sugar
  • 2 tsp vanilla extract
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 350°F and grease a 9×13-inch baking dish.
  2. Tear croissants into large chunks and layer half into the prepared dish.
  3. In a bowl, beat the softened cream cheese, 1/4 cup sugar, and 1 tsp vanilla until smooth.
  4. Drop spoonfuls of the cream cheese mixture over the croissants and sprinkle with half the blueberries.
  5. Add the remaining croissant pieces and blueberries on top.
  6. In another bowl, whisk together eggs, milk, heavy cream, remaining sugar, and vanilla extract.
  7. Pour the custard evenly over the croissant layers.
  8. Let sit for 20–30 minutes (or refrigerate overnight for deeper soak).
  9. Bake uncovered for 35–45 minutes until golden and center is set.
  10. Cool slightly, dust with powdered sugar, and serve warm.
