- 1 cup black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 1 cup shredded lettuce
- 1 large tomato, diced
- 1 avocado, sliced
- ½ cup chipotle ranch dressing
- 4 large flour tortillas
Instructions
- Season and Grill the Chicken – Start by tossing your chicken breasts with olive oil, smoked paprika, garlic powder, cumin, chili powder, salt, and pepper. Let them sit for at least 15 minutes so the flavors can soak in. Grill over medium heat for 6–7 minutes per side, or until the internal temperature reaches 165°F. Once cooked, let the chicken rest for a few minutes before slicing into strips.
- Prepare Your Fillings – While the chicken is cooking, prep your other fillings. Warm the black beans and rice separately. Chop your lettuce, dice the tomato, and slice the avocado. Make sure everything is within easy reach for assembly.
- Build the Burritos – Lay out your tortillas on a flat surface. Layer each one with a portion of rice, beans, grilled chicken, shredded cheddar, lettuce, tomato, avocado, and a generous drizzle of chipotle ranch dressing.
