Description

Ingredients

  • 2 teaspoons active dry yeast
  • 4 cups all-purpose flour
  • 2 teaspoons sea salt
  • 1/4 cup olive oil
  • Cherry tomatoes

  • Olives
  • 1 bell pepper
  • Feta cheese
  • Sun-dried tomatoes
  • Fresh herbs
  • Dried herbs like oregano or thyme

Instructions

  1. In a large mixing bowl, combine 2 cups of warm water with 2 teaspoons of active dry yeast and let it sit for about 5 minutes until frothy.
  2. Add 4 cups of all-purpose flour, 2 teaspoons of sea salt, and 1/4 cup of olive oil. Mix until a shaggy dough forms.
  3. Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic. If the dough is too sticky, sprinkle a little flour as you knead.
  4. Place the kneaded dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. After the dough has risen, punch it down and turn it out onto an oiled baking sheet. Gently stretch and press the dough into a rectangle or rectangle shape, about 1 inch thick.
  6. Cover the shaped dough with a cloth and let it rise again for about 30 minutes, allowing it to puff up nicely.
  7. Preheat your oven to 425°F (220°C). Dimple the surface of the dough with your fingers and drizzle with more olive oil.
  8. Add your chosen toppings – I love using rosemary, sliced cherry tomatoes, and olives for a festive look.
  9. Place the focaccia in the oven and bake for 20-25 minutes, or until golden brown.
