A comforting garlic and egg soup that is simple to prepare and packed with flavor.
Ingredients

- 20 cloves garlic
- 2 tablespoons olive oil
- 4 cups chicken broth or vegetable broth
- 2 large eggs
- 4 slices crusty bread
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon fresh thyme or parsley (optional)
Instructions
- Peel and gently smash the garlic cloves.
- In a pot, heat olive oil over medium-low heat and cook the garlic slowly until soft and golden.
- Add the broth, salt, pepper, and herbs. Bring to a boil, then reduce heat and simmer uncovered for 20 minutes.
- Beat the eggs in a bowl. Slowly drizzle into the soup while stirring to create egg ribbons.
- Place bread slices into serving bowls and ladle the hot soup over them.
- Garnish with more herbs and serve immediately.
Notes
- This soup can be served with additional herbs on top for added flavor.
