Description

A comforting garlic and egg soup that is simple to prepare and packed with flavor.


Ingredients

Scale
  • 20 cloves garlic
  • 2 tablespoons olive oil
  • 4 cups chicken broth or vegetable broth
  • 2 large eggs
  • 4 slices crusty bread
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme or parsley (optional)

Instructions

  1. Peel and gently smash the garlic cloves.
  2. In a pot, heat olive oil over medium-low heat and cook the garlic slowly until soft and golden.
  3. Add the broth, salt, pepper, and herbs. Bring to a boil, then reduce heat and simmer uncovered for 20 minutes.
  4. Beat the eggs in a bowl. Slowly drizzle into the soup while stirring to create egg ribbons.
  5. Place bread slices into serving bowls and ladle the hot soup over them.
  6. Garnish with more herbs and serve immediately.

Notes

  • This soup can be served with additional herbs on top for added flavor.
