Description

Ingredients

  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 2 cups milk (any kind)
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1 cup mixed berries (fresh or frozen)
  • 1/4 cup chopped nuts or seeds (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining it with paper liners.
  2. In a large bowl, combine rolled oats, baking powder, and cinnamon.
  3. In another bowl, whisk together milk, eggs, and honey or maple syrup. Add the wet mixture to the dry ingredients and stir until just combined.
  4. Gently fold in the berries and nuts if using.
  5. Fill each muffin cup about three-quarters full with the batter and bake for 20-25 minutes until golden brown and set in the center.
