This delicious oven-baked salmon dish features sautéed spinach, perfect for a healthy meal.

- 4 fillets salmon (6 oz each)
- 4 cups baby spinach
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 2 tbsp freshly squeezed lemon juice

Instructions
- Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- In a skillet over medium heat, add olive oil and minced garlic; sauté until fragrant.
- Add spinach to the skillet and stir until wilted (about 3 minutes). Set aside.
- Place salmon fillets skin-side down in the prepared baking dish; season with salt, pepper, and lemon juice.
- Spread the sautéed spinach evenly over each salmon fillet.
- Bake for 15-20 minutes or until the salmon flakes easily with a fork.
