Description

This delicious oven-baked salmon dish features sautéed spinach, perfect for a healthy meal.


Ingredients

  • 4 fillets salmon (6 oz each)
  • 4 cups baby spinach
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tbsp freshly squeezed lemon juice

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. In a skillet over medium heat, add olive oil and minced garlic; sauté until fragrant.
  3. Add spinach to the skillet and stir until wilted (about 3 minutes). Set aside.
  4. Place salmon fillets skin-side down in the prepared baking dish; season with salt, pepper, and lemon juice.
  5. Spread the sautéed spinach evenly over each salmon fillet.
  6. Bake for 15-20 minutes or until the salmon flakes easily with a fork.
