- 8 oz egg noodles
- 2 cups fresh vegetables (bell peppers and carrots)
- 3 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 2 green onions, chopped
- 1 cup chicken breast or tofu, diced
Instructions
- Boil water in a large pot over medium heat. Add egg noodles and cook until al dente (about 5-7 minutes). Drain and set aside.
- In a skillet over medium heat, add sesame oil. Cook the diced chicken or tofu until golden brown (6-8 minutes).
- Add fresh vegetables to the skillet and stir-fry until tender-crisp (3-4 minutes).
- Pour in soy sauce, tossing everything to coat evenly. Heat through for an additional 2-3 minutes.
- Serve hot, garnished with chopped green onions.

- This dish can be easily customized with your favorite vegetables.
- For a vegetarian option, ensure the soy sauce is plant-based.
