Ingredients

  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp mint extract
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup crushed mint candies (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream softened butter with granulated and brown sugars until light and fluffy (about 3-5 minutes).
  4. Beat in the egg, vanilla extract, and mint extract until well mixed.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Stir in chocolate chips and optional crushed mint candies.
  7. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes until soft but set; let cool on the sheet for a few minutes before transferring to a wire rack.
