Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter (softened)
- 1/2 cup granulated sugar
- 1/2 cup brown sugar (packed)
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp mint extract
- 1 cup semi-sweet chocolate chips
- 1/4 cup crushed mint candies (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In another bowl, cream softened butter with granulated and brown sugars until light and fluffy (about 3-5 minutes).
- Beat in the egg, vanilla extract, and mint extract until well mixed.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Stir in chocolate chips and optional crushed mint candies.
- Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until soft but set; let cool on the sheet for a few minutes before transferring to a wire rack.
