A delicious and easy chicken broth soup enriched with eggs and fresh green onions.
Ingredients

- 4 cups low-sodium chicken broth
- 2 large eggs
- 3 green onions (chopped, white and green parts)
- 1 teaspoon fresh ginger (grated)
- 1 tablespoon dark soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons water
- Pepper (to taste)
Instructions
- In a medium saucepan, heat the chicken broth over medium heat until simmering.
- Stir in grated ginger and the white parts of chopped green onions; cook for about one minute.
- Mix cornstarch with water until smooth; gradually add it to the simmering broth to thicken.
- In a separate bowl, beat the eggs; slowly drizzle them into the soup while stirring continuously to create ribbons.
- Add dark soy sauce and season with pepper to taste.
- Remove from heat and stir in the remaining green onion tops before serving.
Notes
- This soup can be customized with other vegetables or proteins as desired.
