Description

A delicious and easy chicken broth soup enriched with eggs and fresh green onions.


Ingredients

  • 4 cups low-sodium chicken broth
  • 2 large eggs
  • 3 green onions (chopped, white and green parts)
  • 1 teaspoon fresh ginger (grated)
  • 1 tablespoon dark soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Pepper (to taste)

Instructions

  1. In a medium saucepan, heat the chicken broth over medium heat until simmering.
  2. Stir in grated ginger and the white parts of chopped green onions; cook for about one minute.
  3. Mix cornstarch with water until smooth; gradually add it to the simmering broth to thicken.
  4. In a separate bowl, beat the eggs; slowly drizzle them into the soup while stirring continuously to create ribbons.
  5. Add dark soy sauce and season with pepper to taste.
  6. Remove from heat and stir in the remaining green onion tops before serving.
