- 4 fillets cod (about 6 oz each)
- 2 tbsp blackening seasoning (store-bought or homemade)
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 2 tbsp freshly squeezed lemon juice
- Chopped fresh parsley for garnish
Instructions
- Rinse cod fillets under cold water and pat dry with paper towels.
- In a bowl, combine blackening seasoning.
- Heat olive oil and butter in a cast-iron skillet over medium-high heat until shimmering.
- Generously rub both sides of the cod fillets with the spice mix.
- Sear fillets in the hot skillet for about 3-4 minutes per side until a blackened crust forms.
- Drizzle with lemon juice and garnish with parsley before serving.
Notes
- For an extra kick, add cayenne pepper to the blackening seasoning.
- Serve with a side of vegetables or rice for a complete meal.
