Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, cream together softened butter and granulated sugar until light and fluffy.
- Mix in the egg yolk and vanilla extract.
- Gradually sift in flour, mixing until a soft dough forms. Chill dough for 30 minutes if sticky.
- Roll out dough on a floured surface to 1/4 inch thick and cut into shapes—one solid round cookie and one with a center cutout.
- Arrange cookies on a parchment-lined baking sheet and bake for 10-12 minutes until lightly golden.
- Cool completely on wire racks.
- Spread strawberry jam on each solid cookie base, top with cutout cookies, and dust with powdered sugar.
