Description

This delicious glazed salmon with roasted Brussels sprouts is a healthy and satisfying meal perfect for any occasion.


Ingredients

  • 2 salmon fillets (6 oz each)
  • 1 lb Brussels sprouts, halved
  • 2 tbsp olive oil, divided
  • 1/4 cup teriyaki sauce
  • 2 tbsp tahini sauce
  • 1 tbsp sesame seeds, toasted
  • 2 green onions, chopped
  • to taste Salt and pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss halved Brussels sprouts in 1 tablespoon of olive oil, salt, and pepper. Spread on the baking sheet and roast for 20-25 minutes until crispy.
  3. Heat a skillet over medium-high heat with remaining olive oil. Cook salmon fillets skin-side down for about 4-5 minutes per side until they flake easily.
  4. Drizzle teriyaki sauce over salmon during the last minute of cooking to caramelize.
  5. Assemble bowls by placing rice as the base, topped with roasted Brussels sprouts, glazed salmon, tahini sauce, sesame seeds, and green onions.
