Ingredients

  • 1 cup fresh spinach, chopped
  • 1 cup grated zucchini (excess moisture squeezed out)
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil (for frying)

Instructions

  1. Prepare the vegetables by washing and chopping the spinach and grating the zucchini; ensure excess moisture is squeezed from the zucchini.
  2. In a large bowl, mix the ricotta cheese and eggs until smooth.
  3. Add flour, garlic powder, salt, pepper, and Parmesan cheese; stir until just combined.
  4. Gently fold in the chopped spinach and grated zucchini.
  5. Heat olive oil in a skillet over medium heat.
  6. Drop spoonfuls of batter into the hot oil, cooking for 3–4 minutes per side until golden brown.
