- 1 cup fresh ricotta cheese
- 1 cup fresh spinach, chopped
- 1 cup grated zucchini (excess moisture squeezed out)
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- Salt and pepper to taste
- 2 tbsp olive oil (for frying)
Instructions
- Prepare the vegetables by washing and chopping the spinach and grating the zucchini; ensure excess moisture is squeezed from the zucchini.
- In a large bowl, mix the ricotta cheese and eggs until smooth.
- Add flour, garlic powder, salt, pepper, and Parmesan cheese; stir until just combined.
- Gently fold in the chopped spinach and grated zucchini.
- Heat olive oil in a skillet over medium heat.
- Drop spoonfuls of batter into the hot oil, cooking for 3–4 minutes per side until golden brown.
Notes
- These fritters can be served with a dipping sauce of your choice.
- For a healthier option, consider baking instead of frying.
