Delicious puffed pancakes that are easy to make and perfect for breakfast.
Ingredients

- 6 large eggs
- 1 cup whole milk
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 6 teaspoons unsalted butter (1/2 teaspoon per muffin cup)
Instructions
- Preheat your oven to 400°F (200°C). Place 1/2 teaspoon of butter into each muffin cup and place the tin in the oven until butter melts and sizzles.
- In a blender, combine eggs, milk, flour, salt, and vanilla. Blend until smooth. Let the batter rest for 5 minutes.
- Remove the hot tin from the oven and quickly pour batter into each muffin cup, filling each halfway.
- Return muffin tin to oven and bake for 14–17 minutes until puffed and golden around the edges.
- Carefully remove pancakes from the tin and serve immediately with powdered sugar, fruit, or syrup.
