- 1 lb lean ground turkey
- 8 oz penne pasta
- 2 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1 medium onion, finely chopped
- 1 bell pepper (any color), diced
- 14 oz tinned diced tomatoes
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1/2 cup freshly grated Parmesan cheese
Instructions
- Cook the pasta: Boil a large pot of salted water, add penne, and cook until al dente (8–10 minutes). Drain and set aside.
- Sauté aromatics: In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic; cook until fragrant (about 3 minutes).
- Brown the turkey: Add ground turkey to the skillet. Cook until browned, breaking it up with a wooden spoon (5–7 minutes).
- Add vegetables: Stir in diced bell pepper and cook until slightly softened (3–4 minutes).
- Make the sauce: Add tinned diced tomatoes, Italian seasoning, salt, and pepper. Simmer for about 10 minutes.
- Combine: Toss cooked pasta into the skillet with the turkey sauce, mixing well to coat evenly. Serve hot with Parmesan cheese on top.
