Description

Deliciously soft and chewy white chocolate cranberry bars topped with a creamy frosting.

Ingredients

Scale
  • 1 cup unsalted butter, melted
  • 1 1/4 cups light brown sugar, packed
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 3/4 cup white chocolate chips
  • 2/3 cup dried cranberries
  • 8 ounces cream cheese, softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon orange zest
  • 1/3 cup dried cranberries, chopped
  • 1/2 cup white chocolate, melted

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, whisk melted butter and brown sugar until smooth. Add eggs and vanilla; mix well.
  3. In a separate bowl, whisk flour, baking powder, salt, and ground ginger. Gradually fold into wet mixture.
  4. Stir in white chocolate chips and dried cranberries. Spread evenly in the prepared pan.
  5. Bake for 20–24 minutes, or until golden and a toothpick comes out clean. Cool completely in the pan.
  6. To make frosting, beat softened cream cheese until smooth. Gradually add powdered sugar and orange zest. Beat until fluffy.
  7. Spread frosting evenly over cooled bars.
  8. Top with chopped dried cranberries and drizzle melted white chocolate in zigzag lines.
  9. Chill for at least 30 minutes before cutting into squares or triangles.

Notes

  • The bars can be stored in an airtight container in the refrigerator for up to a week.
