Deliciously soft and chewy white chocolate cranberry bars topped with a creamy frosting.

- 1 cup unsalted butter, melted
- 1 1/4 cups light brown sugar, packed
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground ginger
- 3/4 cup white chocolate chips
- 2/3 cup dried cranberries
- 8 ounces cream cheese, softened
- 1 1/2 cups powdered sugar
- 1 teaspoon orange zest
- 1/3 cup dried cranberries, chopped
- 1/2 cup white chocolate, melted
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a large bowl, whisk melted butter and brown sugar until smooth. Add eggs and vanilla; mix well.
- In a separate bowl, whisk flour, baking powder, salt, and ground ginger. Gradually fold into wet mixture.
- Stir in white chocolate chips and dried cranberries. Spread evenly in the prepared pan.
- Bake for 20–24 minutes, or until golden and a toothpick comes out clean. Cool completely in the pan.
- To make frosting, beat softened cream cheese until smooth. Gradually add powdered sugar and orange zest. Beat until fluffy.
- Spread frosting evenly over cooled bars.
- Top with chopped dried cranberries and drizzle melted white chocolate in zigzag lines.
- Chill for at least 30 minutes before cutting into squares or triangles.
Notes
- The bars can be stored in an airtight container in the refrigerator for up to a week.
- For a festive touch, add chopped nuts or additional dried fruits.
