- 4 boneless, skinless chicken breasts (pounded to ¼-inch thickness)
- 1 cup ricotta cheese
- 2 cloves garlic, minced
- 2 tbsp chopped fresh herbs (parsley, basil, thyme, or oregano)
- ¼ cup grated Parmesan cheese
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp olive oil
- 1 tsp lemon zest (optional)
- a pinch of red pepper flakes (optional)
- ½ cup shredded mozzarella (optional)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Pound the chicken breasts to an even ¼-inch thickness between sheets of parchment paper.
- In a bowl, mix ricotta, garlic, herbs, Parmesan, salt, pepper, and optional lemon zest or red pepper flakes.
- Spread 2–3 tablespoons of the ricotta filling on each chicken breast and roll them tightly.
- Secure with toothpicks if needed and place seam-side down in the baking dish.
- Drizzle the tops with olive oil and season with additional salt and pepper.
- Bake for 25–30 minutes, or until the chicken is cooked through (internal temp 165°F).
- Optional: Sprinkle shredded mozzarella or extra Parmesan on top during the last 5 minutes of baking.
- Let rest 5 minutes before slicing and serving.
