- 1 lb fresh Brussels sprouts, halved
- 2 tbsp tahini
- 2 tsp fresh thyme, chopped
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss halved Brussels sprouts with olive oil, salt, and pepper until well-coated.
- Spread the sprouts on a baking sheet in a single layer and roast for 20-25 minutes until golden brown.
- While roasting, mix tahini with chopped thyme in a small bowl.
- Once roasted, drizzle the tahini mixture over the Brussels sprouts and toss gently.
- Serve warm and enjoy!
Notes
- For extra flavor, you can add garlic powder to the Brussels sprouts before roasting.
- Can be served as a side dish or a main course on a bed of grains.
