  • 3 tablespoons Butter
  • 1/2 cup Milk
  • 1 tablespoon Fresh Thyme
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 6 links Irish Sausages

Instructions

  1. Preheat your oven to 375°F (190°C). Gather your ingredients and equipment, including a large pot for boiling potatoes, and a muffin tin for baking.
  2. Peel and chop the russet potatoes into equal-sized chunks. Place them in salted boiling water and cook for about 15-20 minutes until fork-tender.
  3. Mash the drained potatoes until creamy. Stir in the butter, milk, thyme, salt, and pepper to taste.
  4. Grease a muffin tin with butter or non-stick cooking spray.
  5. Press mashed potatoes into each muffin cup, creating a hollow center.
  6. Pre-cook the Irish sausages in a skillet over medium heat for about 8-10 minutes.
  7. Fill each potato cup with a piece of the cooked sausage and bake for 30 minutes or until golden brown.
  8. Let cool for a few minutes before lifting out. Serve warm, garnished with fresh herbs.
