Instructions
- Preheat your oven to 375°F (190°C). Gather your ingredients and equipment, including a large pot for boiling potatoes, and a muffin tin for baking.
- Peel and chop the russet potatoes into equal-sized chunks. Place them in salted boiling water and cook for about 15-20 minutes until fork-tender.
- Mash the drained potatoes until creamy. Stir in the butter, milk, thyme, salt, and pepper to taste.
- Grease a muffin tin with butter or non-stick cooking spray.
- Press mashed potatoes into each muffin cup, creating a hollow center.
- Pre-cook the Irish sausages in a skillet over medium heat for about 8-10 minutes.
- Fill each potato cup with a piece of the cooked sausage and bake for 30 minutes or until golden brown.
- Let cool for a few minutes before lifting out. Serve warm, garnished with fresh herbs.
