A refreshing salad made with shredded cabbage, colorful bell peppers, and a simple homemade dressing.

- 4 cups shredded green cabbage
- 1 cup grated carrots
- 1/2 cup thinly sliced red onion
- 1 cup diced bell peppers (mixed colors)
- 1/4 cup olive oil
- 2 tbsp vinegar (apple cider or white)
- 1 tsp mustard
- 1 tbsp honey
- Salt and pepper to taste
- 2 tbsp chopped parsley or cilantro (optional)
Instructions
- Wash all vegetables thoroughly. Shred the cabbage into thin strips and grate or julienne the carrots.
- In a large bowl, combine the shredded cabbage, grated carrots, sliced red onion, and diced bell peppers; toss gently.
- In a small bowl, whisk together olive oil, vinegar, mustard, honey, salt, and pepper until smooth.
- Pour the dressing over the vegetable mixture and toss until evenly coated.
- Chill in the refrigerator for at least 30 minutes to allow flavors to meld before serving.
