Description

Ingredients

  • 1 cup grated carrots
  • 1/2 cup thinly sliced red onion
  • 1 cup diced bell peppers (mixed colors)

  • 2 tbsp vinegar (apple cider or white)

  • 1 tbsp honey
  • Salt and pepper to taste
  • 2 tbsp chopped parsley or cilantro (optional)

Instructions

  1. Wash all vegetables thoroughly. Shred the cabbage into thin strips and grate or julienne the carrots.
  2. In a large bowl, combine the shredded cabbage, grated carrots, sliced red onion, and diced bell peppers; toss gently.
  3. In a small bowl, whisk together olive oil, vinegar, mustard, honey, salt, and pepper until smooth.
  4. Pour the dressing over the vegetable mixture and toss until evenly coated.
  5. Chill in the refrigerator for at least 30 minutes to allow flavors to meld before serving.
