Description

A comforting and delicious classic lasagna recipe that features layers of noodles, ricotta, spinach, mozzarella, and marinara sauce.


Ingredients

  • 1/2 pound Lasagna Noodles
  • enough Warm Water (to submerge the noodles for soaking)
  • 2 Eggs
  • 1 (16-ounce) Ricotta Cheese (whole milk or part skim)
  • 4 ounces Fresh Spinach (about 4 cups packed or 2 cups finely chopped, frozen)
  • 4 cloves Garlic (minced)
  • 1 tablespoon Dried Oregano (or Italian Seasoning)
  • 1 teaspoon Sea Salt
  • ¼ teaspoon Black Pepper
  • 1 (28-ounce) Marinara Sauce (about 3 1/2 cups)
  • 1 pound Shredded Mozzarella Cheese (about 4 cups)
  • 1/4 cup Grated Parmesan Cheese
  • 1 tablespoon Fresh Parsley (finely chopped, optional)

Instructions

  1. Preheat the oven to 375°F and lightly coat your baking dish with cooking spray.
  2. Soak the lasagna noodles in warm water for about 15 minutes to soften, then pat dry to remove excess water.
  3. Trim the noodles to fit your baking pan.
  4. In a large bowl, lightly beat the eggs, then add ricotta, spinach, garlic, oregano, salt, and pepper, stirring until well combined.
  5. In the baking dish, layer: 1 cup marinara, 3 noodles, half of the ricotta-spinach mixture, and 1 cup mozzarella.
  6. Repeat layer: 1 cup marinara, 3 noodles, remaining ricotta-spinach mixture, and 1 cup mozzarella.
  7. Top with 1 cup marinara, the final 3 noodles (cut to fit), and a generous sprinkle of remaining mozzarella and parmesan.
  8. Cover with foil (spraying the underside with cooking spray) and bake for 30 minutes.
  9. Uncover and bake for an additional 20-30 minutes until the sauce is bubbling and the top is lightly browned.
  10. Let the lasagna rest uncovered for at least 30 minutes before slicing.
  11. Serve with a drizzle of marinara and garnish with fresh parsley or extra parmesan if desired.

Notes

  • For 9-12 lasagna noodles, adjust soaking time based on the thickness of noodles.
  • If using frozen spinach, ensure it is thawed and excess water is squeezed out before adding to the filling.
  • This recipe can be divided into two 10×7 loaf pans if preferred.
  • Storage: Cool completely, refrigerate in an airtight container for up to 5 days, or freeze for 90 days.
