Description

This delicious Instant Pot French Onion Beef Chuck Roast is a comforting meal that’s rich in flavor and easy to prepare.


Ingredients

  • 3 pounds beef chuck roast
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 (10 oz) can condensed French onion soup
  • 1 cup beef broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 2 cloves garlic, minced

Instructions

  1. Set the Instant Pot to sauté mode. Add butter and olive oil, then cook sliced onions for 6-8 minutes until softened and golden.
  2. Add minced garlic, thyme, salt, and black pepper. Sauté for 1 minute until fragrant.
  3. Push onions to the side and sear the beef chuck roast on all sides until browned, about 2-3 minutes per side.
  4. Pour in French onion soup, beef broth, and Worcestershire sauce. Scrape any browned bits from the bottom of the pot.
  5. Cancel sauté mode. Seal the Instant Pot and cook on high pressure for 70 minutes.
  6. Allow a natural release for 15 minutes before opening the lid.
  7. Transfer the roast to a platter. Stir the onion sauce and spoon over the sliced roast to serve.

Notes

  • For best results, allow the roast to rest for a few minutes before slicing.
  • This recipe can easily be doubled for larger gatherings.
