- 2 large Idaho potatoes, cut into wedges
- 1 whole garlic bulb
- 3 tbsp extra virgin olive oil
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper (adjust to taste)
- Fresh herbs (optional, like rosemary or thyme)
Instructions
- Preheat oven to 425°F (220°C).
- Wash and scrub the Idaho potatoes; cut them into even-sized wedges.
- Prepare the garlic by slicing off the top of the bulb, drizzling it with olive oil, wrapping in foil, and roasting alongside the potatoes for about 30 minutes.
- In a bowl, combine potato wedges with olive oil, salt, pepper, and squeezed roasted garlic cloves; toss until evenly coated.
- Spread the potatoes on a parchment-lined baking sheet in a single layer; roast for 40-45 minutes or until golden brown and crispy, flipping halfway through.
- Garnish with fresh herbs if desired and serve hot.
