Instructions

  1. Preheat oven to 425°F (220°C).
  2. Wash and scrub the Idaho potatoes; cut them into even-sized wedges.
  3. Prepare the garlic by slicing off the top of the bulb, drizzling it with olive oil, wrapping in foil, and roasting alongside the potatoes for about 30 minutes.
  4. In a bowl, combine potato wedges with olive oil, salt, pepper, and squeezed roasted garlic cloves; toss until evenly coated.
  5. Spread the potatoes on a parchment-lined baking sheet in a single layer; roast for 40-45 minutes or until golden brown and crispy, flipping halfway through.
