A delicious and easy cheesy ground turkey casserole that’s perfect for a weeknight dinner.

- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 1/2 cups cauliflower rice
- 1 cup spinach, chopped (optional)
- 4 ounces cream cheese
- 1/4 cup heavy cream
- 2 large eggs
- 1 1/2 cups shredded cheddar cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon Italian seasoning
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13 casserole dish.
- Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic; sauté until translucent.
- Add ground turkey and cook until browned, breaking it up with a spatula. Season with salt, pepper, paprika, and Italian seasoning.
- Stir in cauliflower rice and spinach, cooking for 3–5 minutes until moisture is mostly evaporated.
- In a mixing bowl, whisk eggs, then combine with cream cheese, heavy cream, and half of the shredded cheddar. Mix until smooth.
- Pour the cheese mixture into the skillet with turkey and veggies. Stir to combine evenly.
- Transfer the mixture into the greased casserole dish and spread evenly.
- Top with the remaining cheddar cheese.
- Bake for 25–30 minutes, or until bubbly and golden on top.
- Let cool slightly before slicing and serving.
Notes
- You can add different vegetables based on your preferences.
- This casserole is a great make-ahead meal and can be frozen for later use.
