Deliciously soft cookies filled with toffee bits and optional chocolate chips or pecans.
Ingredients

- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup chopped toffee bits
- 1/2 cup optional: chocolate chips or chopped pecans
Instructions
- Beat the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually mix the dry ingredients into the wet mixture.
- Fold in chopped toffee bits and any optional add-ins.
- Divide dough in half, shape into logs, wrap, and refrigerate for at least 3 hours.
- Preheat oven to 350°F (175°C). Slice logs into 1/4-inch thick rounds.
- Bake on a lined sheet for 10-12 minutes or until edges are golden.
- Cool on baking sheet for 5 minutes, then transfer to a wire rack.
Notes
- If you don’t have toffee bits, you can substitute with chopped chocolate bars.
- Make sure to chill the dough to help maintain shape while baking.
