Description

Delicious no-bake chocolate peanut butter corn flake bars, perfect for a quick treat!


Ingredients

  • 1 cup natural creamy peanut butter (unsweetened)
  • 1/2 cup pure maple syrup
  • 2 cups corn flakes (gluten-free, crushed lightly)
  • 1/4 teaspoon sea salt
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups dark chocolate chips (dairy-free if desired)
  • 1 tablespoon coconut oil

Instructions

  1. Line an 8×8-inch baking pan with parchment paper.
  2. In a medium saucepan over medium-low heat, combine peanut butter and maple syrup. Stir constantly for about 2-3 minutes, until the mixture is smooth and just begins to bubble.
  3. Remove the pan from heat. Stir in sea salt and vanilla extract. Gently fold in the crushed corn flakes until thoroughly coated.
  4. Transfer the mixture into the prepared pan. Press down firmly and evenly with a spatula or your hands to pack it tightly. Chill in the freezer for at least 20 minutes to firm up.
  5. While the bars are chilling, melt the dark chocolate chips and coconut oil together in a microwave-safe bowl in 30-second increments, stirring in between, until smooth.
  6. Remove the chilled mixture from the pan and cut into desired bar shapes (about 12 pieces). Dip each piece into the melted chocolate mixture using a fork, letting excess drip off, and place on a parchment-lined tray.
  7. Return to the freezer for another 15-20 minutes, or until chocolate is set.
